Vegetable Tortilla

With the worldwide popularity of the Mexican cuisine, there are many ‘localised’ ways to prepare a tasty tortilla even if you are far from Latin America. This is how we like to make them (2 portions):

Clean and cut one onion, one bell pepper, one zucchini and two tomatoes into cubes. Fry the onion, pepper and zucchini on sunflower oil with a teaspoon of cajun spice mix until soft, then add the tomatoes and finish off.

Meanwhile, warm up the tortillas (you can do this by putting them into the steam above the pan). When the vegetables are ready, wrap them into the tortillas, put a slice of cheddar on top of each one and bake them briefly until the cheese melts.

Serve with a red salsa, guacamole and sour cream.
